Ingredients
2lbs.of scallops cleaned
1lb.angel hair pasta
1cauliflower sectioned
1/2tsp.salt for scallops
1/4tsp.black pepper for scallops
Pinchsalt for cauliflower
Pinchblack pepper for cauliflower
4clovesgarlic sliced
2tbsp.canola oil cauliflower
1/4cupbutter for scallops
1candiced tomatoes15-16 oz.
Instructions
Cooking the Angel Hair:
Follow the package instructions to cook the angel hair al dente (5-7 minutes). Strain pasta and place in a large bowl

Preparing the Scallops:
While the angel hair is cooking, in a large skillet on high heat melt ¼ cup of butter. When the butter is melted add the scallops, garlic, salt, and pepper and saute until golden brown (about 4-5 minutes), mixing occasionally.
2 lbs. of scallops, 1/2 tsp. salt for scallops, 4 cloves garlic, 1/4 cup butter for scallops, 1/4 tsp. black pepper for scallops
Bringing Everything Together:
While the angel hair is cooking, in a clean skillet bring 2 tablespoons of canola oil to high heat.

Add the sectioned cauliflower and season with a pinch of salt and pepper. Lower to medium heat and sauté until the cauliflower is browned (about 5-7 minutes), mixing occasionally.

Next, add the diced tomatoes and cook for 2 minutes until the tomatoes are hot and mixed well with the cauliflower.

Finally, add the scallop mixture into the skillet with the cauliflower and tomatoes. Cook for 2 minutes mixing occasionally to incorporate.
To Serve:
Place the angel hair in the center of a bowl and spoon over the desired amount of scallops, cauliflower, and tomatoes.

This recipe will be great with any type of pasta so use your favorite, or try the angel hair.Diced tomatoes are a staple in my pantry so I incorporate them into a lot of dishes. If you would rather use fresh tomatoes for this recipe, I recommend cherry or grape tomatoes.
