2thick-cut boneless pork chopscut into ½-inch pieces

Instructions
Preparing the Chicken:
In a large pot or skillet add in the olive oil and bring to high heat. Next, add in the garlic and leeks and sauté for 2 minutes, mixing occasionally.
Next, add the pork, salt, and ground black pepper and sauté for 5 minutes, mixing occasionally.
Bringing Everything Together:
Continuing on high heat, add the eggplant, green beans, and diced tomatoes and bring to a simmer.
Finally, cook for 8 minutes, mixing occasionally, or until the green beans are tender.
