Ingredients
1large or 2 medium russet potatoes sliced thin
1onion sliced
1/4cupcanola oil
1/2tsp.salt
1/4tsp.black pepper
Instructions
Preparing the Potatoes:
Slice the potatoes and onion into thin pieces. In a medium skillet add the oil and bring to a high heat. Next, add a layer or potatoes to the skillet making sure to not cover the potatoes.
Next, add a layer of onions on top of the potatoes and season with half of the salt and pepper. Repeat this process with another layer of potatoes, onions, salt, and pepper until all the ingredients are in the skillet.
Cover the potatoes and saute for 10 minutes on medium heat. Next, turn over the potatoes and cook for 5 minutes on medium heat. Finally, turn over the potatoes one more time and cook for 5 minutes.
To Serve:
Serve with breakfast as a side with eggs.
Notes
Invent Your Recipe:You can easily make this recipe without the onions. Just leave them out and follow the remaining steps to layer the potatoes. Without the onions you might need to reduce the cook time just a bit, maybe 3-5 minutes off of the total time.You can also add in vegetables. Try some bell pepper or mushrooms. They will add to the flavor and nutrition.
