1lbSmall Red Potatoes
12ozBaby Spinach

Preheat the oven to 400 degrees
Preparing The Potatoes
Place potatoes on a baking sheet and mix with 1/4 cup extra virgin olive oil. Sprinkle salt and pepper over potatoes to taste.
1 lb Small Red Potatoes, Pinch Salt, 1/2 cup Extra Virgin Olive Oil, Pinch Ground Black Pepper
Place in 400 degree oven and roast for 30-40 minutes until potatoes are tender.
Preparing The Steak
Season steak with salt, pepper, onion powder, and garlic powder. In a oven safe skillet, melt the butter on high heat and add the steak.
12 oz NY Strip Steak, Pinch Garlic Powder, Pinch Onion Powder, 1 tbsp Butter
Sear for 3 minutes until a nice crust forms. Flip the steak over and sear for 3 minutes.
Remove the skillet from the heat and place in the oven and roast for 5-7 minutes until medium-rare.
Preparing the Spinach
In a large skillet, bring 1/4 cup of extra virgin olive oil to high heat. Next, add onion and garlic and sauté for 5 minutes (until garlic is golden and onions become clear).
12 oz Baby Spinach, 1 medium Sweet Onion, 2 cloves Garlic
Next, add the mushrooms and sauté for 5 minutes until mushrooms shrink by half.
8 oz Mushrooms Sliced
Finally, add the spinach, salt and pepper to taste, and sauté for 1-2 minutes, until the spinach reduced by half the size.
To Serve
After cooking, let the steak sit for 5 minutes before serving. You can slice the steak into pieces and plate next to the potatoes and spinach.
Alternatively, leave the steak with roasted potatoes alone, and serve the whole piece.
Notes
Invent your Recipe: My preferred method to cooking a steak is on the grill. I just love the flavor and juiciness you achieve from the grill. If the weather does not allow for the use of the grill, I move to the stove top and sear my steak.In this recipe, I finish the NY strip in the oven, however, depending on how you like your steak, rare, medium-rare, medium, well, you can just cook the entire steak in the skillet. If you love a rare steak, just sear the NY strip for about 3-4 minutes on each side and enjoy.One of my favorite additions to complement a steak is mushrooms and onions. In this recipe I add in some spinach as well for a different experience and for some green vegetables. If you are not a fan or spinach, leave it out, or cook another green vegetables separately, such as green beans, Brussel sprout, or broccoli.
