Try portobello, cremini, shitake, or porcini.The peas and onions make this dish naturally sweet. For some additional flavor try mixing in some herbs like basil, oregano, thyme, sage, or rosemary. Or, try a bit of spice with cayenne pepper powder or diced jalapeños.As written, peas and mushrooms is vegetarian. However, I have made this recipe other times with grilled chicken, ground beef, or sautéed shrimp. Chop up the cooked meat, add some rice, mix in the mushrooms and peas, and enjoy a rice bowl.
