Begin by cleaning and trimming the skin and fat from the chicken thighs. Place the chicken into a large mixing bowl or a sealable plastic bag.
Next, add the remaining ingredients. Mix well and marinate for 2 hours in the refrigerator.
Cooking the chicken:
On a preheated grill, place the chicken thighs evenly apart and cook for about 12-14 minutes, or until the chicken reaches and internal temperature of 165 degrees.
Recommended Grilling Method:
Rotate the thighs 3 minutes into cooking, flip the thighs after 6 minutes of cooking, and rotate the thighs a final time after 9 minutes of cooking.
Cook for another 3-5 minutes until the chicken reaches an internal temperature of 165 degrees
To Serve:
Serve this honey mustard chicken with a vegetable and over rice or with a side of roasted potatoes.

Invent Your Recipe:For this honey mustard sauce I am using spicy brown mustard. This marinade would also work with other types of mustard, such as, yellow, Dijon, hot mustard, whole grain, or horseradish. The cinnamon in the recipe adds some nice flavor, but you can leave it out all the same. Try this recipe a few times with different types of mustard.
