Ingredients
1package gnocchi15-18 ounces
8ouncessliced mushrooms
4ouncessun-dried tomatoessliced
4clovesgarlicsliced
¼cupolive oil
4ouncesgnocchi water
½teaspoonsalt
¼teaspoonground black pepper
Instructions
Preparing Gnocchi:
Prepare the gnocchi according to the package instructions. Reserve 4 ounces of starchy water.
Preparing the Mushrooms:
While the gnocchi are cooking, add the extra virgin olive oil in a large skillet and bring to a high heat. Next, add the garlic and sauté until golden, about 1-2 minutes.
Lower to medium heat, add the mushrooms, sun-dried tomatoes, salt, and ground black pepper, then sauté for 5 minutes, mixing occasionally.
Bringing It All Together:
Continuing on medium heat, add the cooked gnocchi and starchy water to the sun-dried tomatoes, and bring to a simmer.
Combine well and cook for 2 minutes, mixing occasionally, or until the liquid is reduced and thickened.

Invent Your Recipe:For this recipe, Gnocchi and Mushrooms, I use starchy water to de-glaze the skillet and thicken the sauce. For added flavor, you could also use white wine or broth. Sun-dried tomatoes give this recipe a wonderful flavor and color. However, I have made this recipe with fresh cherry tomatoes, a can of diced tomatoes, or even tomato paste. They all work well and taste great, so pick the one that works best for you. If you have fresh herbs I recommend you use them. Fresh oregano, basil, or thyme would work wonderfully in this recipe. The mushrooms and sundried tomatoes pair well in the recipe. However, use the vegetables that you like. Try zucchini, eggplant, asparagus, peppers, spinach, or onions. Try combinations or vegetables to really make this dish a vegetarian delight!
