Ingredients
1package of gnocchi
2cupsbroccoli florets
4clovesof garlic minced
¼cupextra virgin olive oil
½tsp.of salt
¼tsp.of black pepper
Grated cheese to taste
Instructions
Preparing Gnocchi:
Prepare the gnocchi according to the instructions.
Preparing the Broccoli:
While the gnocchi are cooking, in a large skillet bring the extra virgin olive oil to high heat.
Next, add in the garlic and sauté until the garlic is golden (about 2-3 minutes). Lower to medium heat and add in the broccoli, salt, and pepper.
Sauté for 5-8 minutes until the broccoli is tender.
Bringing it all Together:
When the broccoli is tender, add in the cooked gnocchi and sauté for 2 minutes on medium heat, mixing occasionally.
To Serve:
Sprinkle the gnocchi and broccoli with some grated cheese and serve as a side or main dish.
Notes
Invent Your Recipe:This recipe is actually a take on Pasta Aglio e Olio (pasta with garlic and oil). Instead of using pasta, I substitute the gnocchi. To complement the gnocchi, I use broccoli to make this dish feel more substantial and to stand on its own as a main entrée.I have also made this recipe with several other vegetables, including, green beans, asparagus, zucchini, peppers, onions, and Brussel sprouts. Try some different vegetables combinations and this simple, tasty recipe will keep on giving.
