Preparing the Turkey:
Season turkey breasts with salt, pepper, garlic powder, and oregano. In a large oven-safe skillet on high heat pan sear turkey breasts in butter until golden brown on both sides (10 minutes total).
Place the skillet in the oven and cook at 375 degrees for 20 minutes or until the turkey reaches and internal temperature of 170 degrees. Remove the turkey breast from the skillet and place on a cutting board to rest for 10 minutes.
Preparing the Onions:
Return the skillet to high heat (with remaining butter), and add in the sliced onions. Once the onions begins to turn golden brown, reduce to medium heat and saute for 5 minutes, or until the onions are soft.
To Serve:
Slice the turkey breast into 1 inch slices and serve with sauteed onions and roasted potatoes or brown rice.
Notes
Invent Your Recipe:I really believe turkey is an under appreciated recipe option. Chicken, pork, beef, and seafood seem to get all the attention. I really enjoy making turkey breasts. Essentially, any recipe where you use chicken as the main ingredient, you can substitute turkey. With that said, in this recipe you can do the opposite, and substitute chicken breasts in for the turkey breasts. The cooking time would be reduced if the chicken breasts are smaller. Take that into consideration when you place the skillet into the oven.
