Place the pork chops onto a backing sheet and season with salt and pepper. Place in the oven and back at 375 degrees for 25 minutes.
Preparing the Sweet Potatoes:
Begin by removing the skin from the sweet potatoes. Next, cut the sweet potatoes into wedges or fries and place onto a baking sheet (you could even use the same baking sheet as the pork chops if there is room).
Next, drizzle with canola oil then bake in the oven at 375 degrees for 30 minutes.
Preparing the Sauce:
While the pork and sweet potatoes are cooking bring a medium sauce pan to high heat.
Next, add in the butter and brown sugar and melt, while mixing. Next, add in the orange juice, orange slices, raisins, cinnamon, and water.
Bring to a simmer and cook for 15 minutes, mixing occasionally, or until the sauce reached your desired thickness.
Bringing Everything Together:
Remove the pork from the oven and spoon over the sauce, ensuring to place some raisings and oranges on each pork chops.
Place the pork back into the oven and bake for 5 minutes. Remove the pork chops and plate each piece of pork with a handful of sweet potato fries.
To Serve:
Serve the cinnamon raisin pork chops with a side of sweet potato fries and green beans, or another green vegetable.
Notes
Invent Your Recipe:For this recipe I am using a boneless pork loin and cutting 1" thick pork chops from the loin. I have also made this recipe with boneless chicken breasts and salmon. If you use salmon I would recommend a 6 oz. piece per person and I would make the baking time 20 minutes at 375 degrees. Then top the salmon with the sauce (including raisins and oranges) and bake for 5 more minutes.I chose sweet potatoes for this recipe because they pair well with the cinnamon raisin sauce. Any extra sauce I will use as a dipping sauce for the sweet potatoes, or just drizzle the sauce directly over the sweet potato fries. You could also serve regular roasted potatoes, as I am sure they will work well with the cinnamon raisin sauce as well. You could even roast acorn or butternut squash and serve that alongside the pork.Lastly, you will see in the picture of this finished dish that I included green beans with this dish. I would recommend serving a green vegetable with this dish to balance it out. Pick your favorite green vegetable and enjoy.
