In a large skillet add the extra virgin olive oil and bring to a high heat. Next, add the garlic and sauté until golden, about 1-2 minutes.
Next, add in the chicken, salt, and black pepper and sauté for 5 minutes, mixing occasionally, ensuring all side of the chicken are cooked and not pink.
Lower to a medium heat and add in the sun-dried tomatoes and sauté for 5 minutes, mixing occasionally.
To Serve:
Place in a large serving dish or serve with a vegetable.

Invent Your Recipe:I use boneless chicken breasts for this recipe most of the time, but I have also made this dish with sliced boneless pork chops and sliced London broil. The cook times will be similar, just be careful not to overcook the pork or London broil because they will be tough.Sun-dried tomatoes are a favorite of mine, so I use them a lot in my dishes. For this recipe I have also used a can of diced tomatoes, fresh plum tomatoes diced, red roasted peppers, and bell peppers. You could also include olives or artichokes in the dish to increase the flavor profile. Have fun and try multiple combinations of ingredients in this chicken dish.
