Ingredients
2boneless chicken breastscut into bite-sized pieces
2smallzucchiniroughly chopped
1jar salsa8-12 ounces
1canblack beans15-16 ounces with liquid
¼cupolive oil
1teaspoonsalt
½teaspoonground black pepper
1teaspoongarlic powder
Instructions
Preparing the Chicken:
In a large skillet or pot, add in the olive oil and bring to a high heat. Next, add the chicken and sauté on all sides for 5 minutes, mixing occasionally.
Bringing Everything Together:
Continuing on high heat, add the zucchini, salt, ground black pepper, and garlic powder and sauté for 5 minutes, mixing occasionally.
Next, add the salsa and black beans and bring to a simmer. Finally, cook for 5 minutes, mixing occasionally, or until the sauce has thickened.
