1lb.boneless chicken breasts cut into thin pieces
1sweet onion chopped
½cupflour
½cupcanola oil
¼cupbarbecue sauce
½tsp.salt
¼tsp.black pepper
Instructions
Preparing the Chicken:
Trim the fat from the boneless chicken breast and cut them into ½ inch strips. Next, in a mixing bowl add the flour.
Dredge each chicken strip into the flour, ensuring to coat the whole piece, and set aside for cooking.
Cooking the Chicken:
In a large skillet add the canola oil and bring to a high heat. Next, add in the chicken, salt, and black pepper and sauté for 5 minutes, flipping the chicken after 2 minutes.
Next, add in the onion and sauté for 2 minutes, mixing occasionally. Finally, add in the barbeque sauce and sauté for 5 minutes, mixing occasionally, until the chicken starts to get a crust.
To Serve:
Serve the barbeque chicken bites over a bed of rice, or with a vegetable.
Notes
Invent Your Recipe: This is the first version of the BBQ chicken recipe. In this version I cut the chicken into bite sized pieces and coated the pieces in flour before frying in oil. You can easily leave out the flour, and add the chicken to the hot oil and then season with the salt and pepper. You can also bread the chicken using an egg wash and breadcrumbs, in fact, a future BBQ chicken recipe might be made that way.I added the onion to the skillet because I just love onions. The onion is pretty strong, so if you are not a fan of onions, or you just want to enjoy the taste of your favorite barbeque sauce, just leave the onion out.
