In a large skillet add the extra virgin olive oil and bring to a high heat.
Next, add in the tomatoes and sauté for 2 minutes, mixing occasionally.
Next, add in the shrimp, salt, black pepper, oregano, basil, and thyme.
Sauté for 2 minutes, mixing occasionally. Finally, add in the lemon juice and sauté for 1 minute while mixing.
Serve this shrimp with tomatoes and herbs over your favorite pasta or with a side of vegetables.
