How to Make Vegetarian Three Bean Stew

Preparing the Stew:

  • In a large pot add in the extra virgin olive oil and bring to a high heat. Next, add in the garlic and sauté until golden, 1-2 minutes.
  • Next, add in the onions, bell peppers, carrots, salt, and black pepper, and sauté for 5 minutes, mixing occasionally.
  • Next, add in the beans, diced tomatoes, and chili powder and bring to a simmer.
  • Finally, cook for 20 minutes mixing occasionally.

  • Serve this vegetarian three bean stew on a bed of rice or on its own with crusty bread.

I use green bell peppers the most because they seem to be available all year long and are typically less expensive, however, I have used yellow, orange, and red bell pepper in this recipe, so use what you like.

This stew has endless possibilities for ingredients and flavor. Use the vegetables you like and change the seasoning for the sweetness and heat you would like. This base recipe is not spicy, so add crushed red pepper flakes, cayenne pepper, or jalapenos if you like some heat.

  • 1 15 oz. can of navy beans
  • 1 15 oz. can of pinto beans
  • 1 15 oz. can of red kidney beans
  • 1 15 oz. can of diced tomatoes
  • 2 bell peppers chopped
  • 2 medium carrots sliced
  • 1 sweet onion sliced
  • 4 cloves of garlic sliced
  • ¼ cup extra virgin olive oil
  • 1 tsp. salt
  • 1 tsp. chili powder
  • ½ tsp. black pepper
