Easy 15 Minute Tomato Cucumber Salad

Easy Tomato Cucumber salad. Garden fresh cucumbers and tomatoes cut into pieces and seasoned with salt, pepper, balsamic vinegar, and oil. 

This first time I remember having this tomato cucumber salad I was as a little kid. I helped my grandpa pick the tomatoes and cucumbers from his garden and then watched as my grandma prepared the salad. She cut all of her vegetables in her hand with a small sharp knife. She never used a cutting board or chef knife.

As an adult I have tried to find the knife my grandma used, but they do not make them like that anymore. I am pretty sure that knife came over to the United Stated from Italy.

This is one of my favorite salads to make in the warm weather. Especially when I have cucumbers and tomatoes available right from my garden. There is nothing better than a fresh tomato, cucumber, and red onions mixed with oil and vinegar! This Easy Tomato Cucumber Salad is so refreshing and healthy!

The variety of cucumber I grew and used in this recipe is Ashley. I purchased the seeds from MIgardener.

How to Make Tomato Cucumber Salad

Preparing the Tomato Cucumber Salad:

  • Begin by preparing the tomatoes, cucumbers, and onions. You can slice these vegetables any way you prefer.
  • Next, in a large mixing bowl combine all ingredients and mix thoroughly to incorporate.

How to Serve Tomato Cucumber Salad:

  • Place the Tomato and Cucumber Salad in a large serving bowl. For best results place the tomato cucumber salad into the refrigerator for a least 4 hours before serving. This will allow for all of the flavors to come together.

Ingredients
  

  • 4 Roma plum tomatoes sliced
  • 1 large or 2 small cucumbers sliced
  • 1 small red onion sliced
  • ½ cup of extra virgin olive oil
  • ½ cup of red wine vinegar
  • 2 tbsp. balsamic vinegar
  • ½ tsp. salt
  • ¼ tsp. black pepper

Instructions
 

Preparing the Salad:

  • In a large mixing bowl combine all ingredients and mix thoroughly to incorporate.

For this tomato cucumber salad, oil and vinegar are my go-to dressing. However, you can use whichever salad dressing you like. I have never prepared this dish with a creamy dressing such as ranch or honey mustard, but if that is your favorite, go with it.

I like to use plum tomatoes because that is what I like to grow in my garden. I have made this dish with many different varieties of tomatoes, so I know from experience that they all taste great. Chose your favorite tomato and give this salad a try. I promise you will love this tomato cucumber salad and continue to make it for years to come.
