Three Bean Pasta: A 30 Minute Recipe

A nutrient packed simple and quick pasta recipe. This three bean pasta recipe may not look the best, but it tastes great, and is super filling. To keep this dish under 30 minutes, while the pasta is cooking, prepare the rest of the recipe.

I am choosing to add the garden fresh green beans straight to the dish while sautéing. If you prefer more tender green beans, I recommend you boil or steam the green beans for about 5 minutes before adding them into this recipe.

I find, with the green beans from my garden, the need to boil or the steam the beans is a unnecessary step. The green beans are so tasty and sweet right off the plant so I like to preserve as much flavor as possible, thus I skip the precooking.

The green beans in this three beans pasta recipe are flat Italian style green beans from Burpee Seeds. The variety is Early Bush Italian. The flavor is outstanding and the plants grow well here in Maryland.

How to Make Three Bean Pasta

Preparing the Pasta:

  • Prepare the farfalle according to the package instructions for al dente. Drain pasta and set aside.

Preparing the Vegetables:

  • While the farfalle is cooking, in a large skillet add the extra virgin olive oil and bring to high heat. Next, add in the garlic and sauté until golden, about 1-2 minutes.
  • Next, add in the green beans and sauté for 5 minutes, mixing occasionally. Next, add in the diced tomatoes (with liquid), black beans (with liquid), kidney beans (with liquid), salt, and black pepper.
  • Bring to a simmer and cook for 10 minutes, mixing occasionally.

Brining the Recipe Together:

  • Continuing on medium heat add in the cooked pasta and bring to a simmer. Cook for 2 minutes, mixing occasionally to incorporate all of the ingredients.

How To Serve This Three Bean Pasta:

  • Place the three bean pasta in a large serving bowl and serve with crusty Italian bread.
  • Alternatively, serve this three bean pasta as a side dish with chicken, pork, or beef.

Ingredients
  

  • 1 lb. farfalle
