Slow Cooker Chicken and Salsa features the use of a slow cooker which creates a delicious, juicy, and tender pulled chicken.

Welcome to the second recipe in our Chicken and Salsa series of recipes. In this version, Slow Cooker Chicken and Salsa, we are using a slower cooker method to change up this dish. This recipe is a very subtle change, as the first version of this recipe calls for chicken and salsa sautéed together in a skillet. However, a small change like this really does make a completely different dish and eating experience.

In this version of the recipe instead of pan searing the chicken strips, I place the whole chicken breast into the slow cooker. I really enjoyed making the chicken this was because it was very easy.

Once the chicken is in the slow cooker, add the salsa, and turn on the heat for a few hours. Go about your day, check back in later, and dinner is ready.

I serve the salsa chicken over a bed of rotini pasta and next to some beautiful broccoli. Another side dish option that makes a lot of sense is rice.

I prefer brown rice, but pick with ever one you like the best. Try a few different combination and let us know what your favorites are.

How to Make Slow Cooker Chicken and Salsa

Preparing the Chicken:

  • Begin by cleaning and trimming the fat from the chicken breast. Next, place the chicken in the bottom of the slow cooker and season with the salt and pepper.
  • Add the garlic to the top of the chicken and cover with the salsa. Cook on high for 4 hours. After 4 hours, turn off the slow cooker, remove the lid, and pull the chicken apart. Let the chicken rest for 10 minutes before serving.

How to Make Slow Cooker Chicken and Salsa

  • To serve this slow cooker chicken and salsa, place chicken on a bed of brown rice or pasta and serve along size steamed broccoli or your favorite vegetable.
  • For a gluten free option leave out the brown rice, pasta, or other wheat products.

  • 15 oz. jar of salsa mild or choice
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 2 cloves of garlic sliced

  • Add the garlic to the top of the chicken and cover with the salsa. Cook on high for 4 hours.
    15 oz. jar of salsa, 2 cloves of garlic sliced
  • After 4 hours, turn off the slow cooker, remove the lid, and pull the chicken apart. Let the chicken rest for 10 minutes before serving.

To Serve:

  • Place chicken on a bed of brown rice or pasta and serve along size steamed broccoli or your favorite vegetable.

Invent Your Recipe: This is the second version of the chicken salsa recipe. Instead of pan frying the chicken strips, in the recipe I am using a slow cooker to make pulled salsa chicken. This is such an easy set it and forget it meal.

Invent Your Recipe

Pulled salsa chicken in a great start for taco night or for homemade burritos. If you would like your chicken a little crispy, follow these steps. First, take some of the pulled chicken out of the slow cooker.

Next, pan sear it on high for a few minutes, and that is it. If not, enjoy the salsa chicken as is, straight from the slow cooker. Throw in some shredded cheddar cheese for some extra deliciousness!
