Simple Sweet Potato Croquettes. Mashed sweet potatoes mixed with mozzarella cheese, breaded, and fried to perfection. This is a great change-of-pace option instead of your traditional potato croquettes.

This simple sweet potato croquettes recipe will take some time. The quicker version is about 5 hours. The longer version will require an overnight visit to the refrigerator for the croquettes.

The process for making these croquettes is not complicated, it just takes some time and coordination. Because of this I recommend making this recipe ahead of time, or making a double or triple batch so you have enough for a few meals.

These sweet potato croquettes freeze well, so don’t be afraid to make a big batch.

I enjoy making this recipe with another person. The steps are easy, but when I make a big batch some help is nice. My daughter loves to help in the kitchen and this is a perfect opportunity for some daddy-daughter time! I just love our conversations and laughter.

Invent Your Recipe:
A twist on the classic potato croquette, this recipe substitutes in sweet potatoes. For the traditional recipe, you can use yellow potatoes or red bliss potatoes.
The ingredients in the mixture are up to you. The egg is not necessary, it just makes for a better binder when paired with the bread crumbs. If you choose not to use the egg or bread crumbs I highly recommend freezing the croquettes before you fry them. This will help to prevent them from falling apart in the oil.

You could also add more ingredients to the mixture. Maybe some diced bacon, pancetta, or ham? Maybe some vegetables instead like diced peppers and onion? Maybe change out the shredded cheese for some sweet potato and cheddar croquettes.

Play around with the ingredient combinations to find the right combination of flavor and texture for your taste buds.
