Who doesn’t love a quick and easy weeknight meal. After a hard day of work I know I do not want to come home and spend hours preparing a home cooked meal. That is what makes this salsa chicken recipe so fantastic. It has the comfort and taste of a home cook meal, and it is prepared in about 25 minutes.
In addition, this salsa chicken recipe is great for ahead of time meal preparation. Just double of triple the recipe and you will have meals for days.
Just a side note. If you are going to double or triple the recipe you may not need to double or triple the amount of salsa. Too much salsa and the chicken will be swimming. There will also be unused salsa remaining. If you are doubling the salsa chicken recipe, start with 1 1/2 times the amount of salsa and see if that is enough. Likewise, if tripling the recipe, start with 2 times the amount of salsa and go from there.
This is the fifth version or our chicken salsa series of recipes. In this version the main difference is the addition of pinto beans. If you like this salsa chicken recipe, give our other four chicken salsa recipes a try.
