Simple Roasted Potatoes Recipe. Potatoes seasoned with salt, pepper, and oregano, then roasted in the oven to perfection.

This roasted potatoes recipe is one of my weekly go-to side dishes. I always have potatoes in the house and roasting them is easy and the potatoes turn out delicious. These set-it-and-forget-it potatoes will make a nice addition to your dinner menu.

How to Make this Roasted Potatoes Recipe

Preparing the Potatoes:

  • Preheat the oven to 375 degrees. On a baking sheet combine all ingredients, ensuring to mix well to coat the potatoes with the olive oil.
  • Ensure potatoes are spread evenly on the baking sheet.
  • Place in the oven and bake for 50 minutes, or until the potatoes are golden brown.

  • 6 medium red bliss potatoes cut into 1″ pieces
  • 1/4 cup canola oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp oregano

I tend to go lite with the seasoning with these potatoes. I enjoy the taste of potatoes and prefer to let them shine on their own. I add a touch of oregano to these potatoes, but feel free to leave this herb out if you are not a fan.
Likewise, if you enjoy a lot of flavor, add some garlic, scallions, or rosemary.

For this roasted potatoes recipe I am using yellow potatoes. However, feel free to use red potatoes, baking potatoes (russet), or sweet potatoes.
