Quick Chicken Dinner. Juicy sliced chicken sautéed with with peppers and onions and mixed with farfalle pasta.
Pasta, pasta, and more pasta! That is what I would eat all the time if I had any self control and only had the prescribed portion size. Since that is not the case, I sadly can not make pasta as much as I would like.
Luckily tonight I did make pasta, and this dish will surely delight. Garlic, peppers, onions, and chicken! What is not to like?
This recipe can be made ever easier if you have leftover chicken breasts in the house. If that is the case, start the recipe with the vegetables and pasta and add the pre-cooked chicken in towards the end.

How to Make a Quick Chicken Dinner
- Pre-heat the oven to 400 degrees
Preparing the Chicken:
- Place the chicken breasts into a bowl and add the following ingredients: ½ tsp. salt, ¼ tsp. black pepper, ½ tsp. garlic powder, ½ tsp. onion powder, and extra virgin olive oil.
- Mix well ensuring the chicken is completely covered with the seasoning.
- Place the chicken onto a baking sheet and cook in the oven for 20 minutes at 400 degrees. Remove the chicken from the oven and let rest for 5 minutes.
- Next, slice the chicken into strips and set aside to add to the pasta.
Preparing the Vegetables:
- While the chicken is cooking, in a large pot bring ¼ cup of extra virgin olive oil to high heat.
- Next, add the garlic and sauté until golden, about 1-2 minutes.
- Next, add the green bell peppers, red bell peppers, sweet onions, salt, and pepper to the skillet. Sauté until vegetables are tender, about 5-7 minutes.
Preparing the Pasta:
- While the vegetables are sautéing, prepare the pasta according to the package instructions for al dente pasta. Strain the pasta and set aside.
Bringing the Recipe Together
- Add the cooked pasta, sliced chicken breasts, and Romano cheese into the pot with the vegetables.
- Cook for 5 minutes on medium heat, mixing occasionally, or until the dish has reached your desired temperature.

- Place this quick chicken dinner in a serving bowl and sprinkle more Romano cheese if desired.
Invent Your Recipe:
For this quick chicken dinner you can prepare the chicken any way you like; baked, fried, grilled. Frying will increase the calories per serving but adds and additional layer of flavor.
I love the texture and shape of the bow-tie pasta, but you can substitute in your favorite. I would just recommend that you stick with a larger sized pasta such as rigatoni, ziti, penne, or gemelli. The larger pasta gives the dish a great bite!
