Here we are with another garden inspired dinner recipe. With plenty of green beans harvested from the garden and with the first eggplant of the summer, I made this pork tenderloin bites recipe.

I made this recipe in my Dutch oven on the stove top. You can also use a large skillet. I have done that plenty of times in the past but this time it was the Dutch oven.

I can get the Dutch oven nice and hot without worrying about the meat sticking to the pot. Also, I can put the cover on to help soften the vegetables quicker that I can in a skillet.

Whichever you decide to use, skillet, pot, or Dutch over, it is always important to get comfortable with how it cooks on your stovetop.

Ingredients
  

  • 2 garlic cloves sliced
  • 2 leeks or 1 small onion sliced
  • ¼ cup olive oil
  • 2 thick-cut boneless pork chops cut into ½-inch pieces
  • 1 teaspoon salt
