Perfect and Easy 20 Minute Breakfast Potatoes with sauteed onions. Thin sliced russet potatoes layered with onions and sauteed to perfection.
When I go out to a restaurant or diner for breakfast I always order breakfast potatoes. Let me tell you, it is surprisingly difficult to find great breakfast potatoes. They are usually to hard, to soft, flavorless, boiled, burnt, or just plain smashed.
So I started making my own version of breakfast potatoes. What I love about this recipe is that you can customize how you cook the potatoes. You can slice the potatoes really thin, or leave some thickness. You can add onions as I did, or just leave them out. You can cook the potatoes to be very soft, or leave a little bite to them. It is entirely up to you.
When I make this dish I like to get a little crust on the potatoes, so I tend to not mess with them too much. Just let them cook on one side for a few minutes until they get a nice crust, them flip all the potatoes over and repeat on the other side. That is usually enough time to get a soft potato with some nice crust

How to Make Breakfast Potatoes
Preparing the Potatoes:
- Slice the potatoes and onion into thin pieces. In a medium skillet add the oil and bring to a high heat. Next, add a layer or potatoes to the skillet making sure to not cover the potatoes.
- Next, add a layer of onions on top of the potatoes and season with half of the salt and pepper.
- Repeat this process with a second layer of potatoes, onions, salt, and pepper.
- If needed, repeat the process for a third layer. I used one really large potato so I needed a third layer of potatoes. There were only about 6 slices of potatoes left, so I did not add any more onions. I used all of the remaining onions on the second layer. The same with the salt and pepper.
- Cover the potatoes and saute for 10 minutes on medium heat. Next, turn over the potatoes and cook for 5 more minutes on medium heat.
- Finally, turn over the potatoes one more time and cook for 5 minutes.
How to Serve Breakfast Potatoes
- Serve these breakfast potatoes as a side with eggs or your favorite breakfast foods.

Ingredients
- 1 large or 2 medium russet potatoes sliced thin
- 1 onion sliced
- 1/4 cup canola oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper

- Cover the potatoes and saute for 10 minutes on medium heat. Next, turn over the potatoes and cook for 5 minutes on medium heat. Finally, turn over the potatoes one more time and cook for 5 minutes.
To Serve:
- Serve with breakfast as a side with eggs.

You can easily make these perfect breakfast potatoes without the onions. Just leave them out and follow the remaining steps to layer the potatoes. Without the onions you might need to reduce the cook time just a bit, maybe 3-5 minutes off of the total time.
You can also add in vegetables. Try some bell pepper or mushrooms. They will add to the flavor and nutrition.
