Pasta with Zucchini and Tomatoes: A 45 Minute Recipe

Pasta with Zucchini and Tomatoes. Zucchini and tomatoes sautéed with garlic and onions and mixed with pasta.

This was another straight from the garden recipe. I am using fresh zucchini and cherry tomatoes picked from my garden and cooked right away. The garlic is also from my garden, however, the onion is from the grocery store. The zucchini I am using for this dish is the variety called “Costata Romanesco” and I purchased the seeds from Botanical Interests. I have purchased seeds from them for several years and I am always happy with the product.

This recipe comes together relatively fast, making it a great option for a busy day when there is little time to prepare and cook dinner.

How to Make Pasta with Zucchini and Tomatoes

Preparing the Pasta:

  • Prepare the pasta according to the instructions on the package for al dente. Half-way through cooking reserve 8 oz. of pasta water.

Preparing the Vegetables:

  • While the spaghetti is cooking, in a large skillet or pot add the extra virgin olive oil and bring to high heat.
  • Next, add the garlic and onion and sauté for 4 minutes, mixing occasionally.
  • Next, add the zucchini and sauté for 5 minutes, mixing occasionally.
  • Next, add the tomatoes, salt, and ground black pepper and sauté for 5 minutes, mixing occasionally.

Bringing the Recipe Together:

  • Continuing on high heat, add the pasta water, bring to a simmer and cook for 3 minutes, mixing occasionally.

  • Finally, add the cooked pasta and mix well to incorporate all of the ingredients.

Ingredients
  

  • 1 lb. pasta
  • 2 medium zucchini cut into sticks
  • 1 pint cherry tomatoes cut in half
  • 4 cloves garlic sliced
  • 1 medium onion sliced
  • ¼ cup extra virgin olive oil
  • 8 oz. pasta water
  • 2 tbsp. grated parmesan cheese
  • 1 tsp. salt
  • ¼ tsp. ground black pepper

For this pasta with zucchini and tomatoes I am using fusilli for the pasta. I really enjoy the texture and bite of this pasta. However, use which ever pasta you like or have on hand. Penne, rigatoni, rotini, gemelli, and ziti would all work well.
Pasta is really versatile, so I would recommend adding which ever vegetables you like to this dish. I would try green beans, spinach, chard, asparagus, eggplant, carrots, or Brussel sprouts. You could even add a can of cannellini, navy, or great northern beans. That would really make this a filling dish.
For an even more filling dish I would add some grilled chicken, pork, or shrimp to this dish. Grill up the meat separately and mix it into the dish when you add the pasta.
