30 Minute Spaghetti Aglio e Olio and Green Beans. Tender green beans with perfectly cooked spaghetti with oil, garlic, and grated cheese.
Welcome to the second recipe in our Aglio E Olio series of recipes. In this version, Spaghetti aglio e olio with green beans, we are using green beans and regular pasta to change up this dish. This recipe is a very subtle change, as the first version of this recipe calls for broccoli and whole wheat pasta. However, a small change like this does make a completely different dish and eating experience.
Spaghetti with garlic and oil, is there anything better? For me, garlic and oil are magical. It brings immediate flavor to any recipe and fills the kitchen with the most wonderful aroma. Add in a sweet onion, and now we have a real party.
For the unfortunate few who love garlic but can not tolerate eating fresh garlic, use garlic powder in this recipe. I would add about 1/2 teaspoon of garlic powder to the recipe when adding the salt and ground black pepper. Then before serving, taste to see if the garlic flavor is strong enough. If not, you know what to do! Add some more, mix up on low eat, and serve.

How to Make Spaghetti Aglio e Olio and Green Beans
Preparing the Spaghetti:
- In a large pot, add 4 quarts of water and bring to boil. Add spaghetti and cook until al dente (about 7-9 minutes). Before you drain pasta ladle off 4 oz. of pasta water.
Preparing the Sauce:
- While spaghetti is cooking, place a large skillet on medium heat and add the extra virgin olive oil. When oil is hot, add the sliced garlic and saute.
- Once the garlic begins to turn golden brown add the green beans and sauté for 5 minutes, mixing occasionally.
- Next, add the cooked spaghetti, pasta water, salt, black pepper, and grated cheese. Cook for 5 minutes, mixing occasionally.
How to Serve Spaghetti Aglio e Olio and Green Beans
- Place the spaghetti aglio e olio and green beans in a large dish. Add more grated cheese, if desired.
- Additionally, serve this pasta aglio e olio along side a chicken, pork, beef, or seafood dish.
Invent Your Recipe:
Oil and garlic on pasta is amazing! When I add a vegetable to aglio e olio recipes, I usually choose broccoli which holds onto the oil and garlic for an amazing bite! This time around I picked green beans which turned out well. Try other vegetables, like zucchini, eggplant, peppers, peas, or asparagus.
For additional heat add crushed red pepper flakes to the recipe at the pasta and pasta water step. Then mix up and serve.

- 16 oz. green beans
- ½ cup Extra Virgin Olive Oil
- 8 cloves of garlic sliced thin
- 4 oz. pasta water
- ½ tsp. salt
- ¼ tsp. black pepper
- 2 tbsp. grated cheese
