Steak with Roasted Potatoes, tender and juicy, with sautéed spinach and mushrooms. Pan seared NY strip steak finished in the oven and served with perfect roasted potatoes and sautéed spinach.

My absolute favorite cut of steak is NY strip. It is not the most tender steak, but there is just something about it that makes it my favorite. I love the texture, juiciness, tenderness, and marbling of the steak. NY strip is versatile as well, it can be grilled to perfection, or cooked hot and fast on the stove stop as this recipe demonstrates.

If you have never had NY strip, I highly recommend you give it a try. This steak with roasted potatoes recipe is a good place to start. If this is your first time pan-searing a steak, then I would leave out the potatoes and spinach and just focus on the process for cooking the steak.

Make sure your skillet is nice and hot before you add the steak. You want to make sure the steak gets a nice crust, and a hot skillet is what will achieve this. You can melt the butter first, as the recipe indicates, or you can sear the steak for a few minutes, and then add the butter.

If the pan is nice and hot, the steak will get a nice crust and should not stick. I have made the recipe both ways, so it is your personal preference when you decide to add the butter.

NY Strip Steak and Potatoes Recipe For Dinner

If you are concerned about the butter getting too hot and burning, you can add a little oil to the skillet with the butter. This will reduce the risk of the butter burning. Also, after the pan is nice and hot, you can lower the temperature to medium-high if you are concerned with burning the butter.

How to Make Steak with Roasted Potatoes

  • Preheat the oven to 400 degrees

Preparing The Potatoes

  • Place potatoes on a baking sheet and mix with 1/4 cup extra virgin olive oil. Sprinkle salt and pepper over potatoes to taste.
  • Place in 400 degree oven and roast for 30-40 minutes until potatoes are tender.

Preparing The Steak

  • Season steak with salt, pepper, onion powder, and garlic powder. In a oven safe skillet, melt the butter on high heat and add the steak.
  • Sear for 3 minutes until a nice crust forms. Flip the steak over and sear for 3 minutes.
  • Remove the skillet from the heat and place in the oven and roast for 5-7 minutes until medium-rare.

Preparing the Spinach

  • In a large skillet, bring 1/4 cup of extra virgin olive oil to high heat. Next, add onion and garlic and sauté for 5 minutes (until garlic is golden and onions become clear).
  • Next, add the mushrooms and sauté for 5 minutes until mushrooms shrink by half.
  • Finally, add the spinach, salt and pepper to taste, and sauté for 1-2 minutes, until the spinach reduced by half the size.

How to Serve Steak with Roasted Potatoes

  • After cooking, let the steak sit for 5 minutes before serving. You can slice the steak into thin strips and plate next to the potatoes and spinach.
  • Alternatively, leave the steak with roasted potatoes alone, and serve the whole NY strip piece.

Invent Your Recipe

My preferred method to cooking a steak is on the grill. I just love the flavor and juiciness you achieve from the grill. If the weather does not allow for the use of the grill, I move to the stove top and sear my steak.

In this recipe, steak with roasted potatoes, I finish the NY strip in the oven, however, depending on how you like your steak; rare, medium-rare, medium, well, you can just cook the entire steak in the skillet. If you love a rare steak, just sear the NY strip for about 3-4 minutes on each side and enjoy.

One of my favorite additions to complement a steak is mushrooms and onions. In this recipe I add in some spinach as well for a different experience and for some green vegetables. If you are not a fan or spinach, leave it out, or cook another green vegetables separately, such as green beans, Brussel sprout, or broccoli.

  • 12 oz NY Strip Steak
  • 1 lb Small Red Potatoes
  • 12 oz Baby Spinach
  • 8 oz Mushrooms Sliced
  • 1 tbsp Butter
  • 1 medium Sweet Onion sliced
  • 2 cloves Garlic minced
  • Pinch Garlic Powder to season steak
  • Pinch Onion Powder to season steak
