Tasty Grilled Chicken Kabobs Recipe. Marinated chicken, peppers, onions, and tomatoes placed on skewers and grilled to perfection.

Grilled chicken kabobs are a great change of pace and your guests will love the creativity. These are a little time consuming to put together, considering the marinating and the building, but the payoff is worth it.

How to Make This Grilled Chicken Kabobs Recipe

Preparing the Chicken:

  • Begin by cleaning and trimming the fat from the chicken breast. Next, cut the breasts into 1”x1” cubes. Place the chicken into a deep pan or a plastic bag. Next add the salt, black pepper, garlic, onion powder, and Italian dressing. Mix well and marinate for 2 hours in the refrigerator.
  • Remove the chicken from the refrigerator and set out with the other prepared ingredients (red pepper, yellow pepper, red onion, cherry tomatoes, skewers).
  • Note: if using wooden skewers soaking them in water for 10 minutes before using will help prevent the wood from fraying.

  • To prepare the grilled chicken kabobs, place a cherry tomatoes at one end. Next, slide on a piece of chicken, red pepper, red onion, and yellow onion.
  • Repeat this patter until the skewer is full. Cap the other end of the skewer with a cherry tomato. Repeat this process until all the chicken has been placed onto the skewers

Cooking the Grilled Chicken Kabobs:

  • On a preheated grill, place the grilled chicken kabobs one inch apart and cook until the chicken in finished, about 10-15 minutes. Rotate the skewers throughout the cooking process, about every 2-3 minutes.

How to Serve This Grilled Chicken Kabobs Recipe:

  • Place grilled chicken kabobs on a large serving dish.
  • Pair these grilled chicken kabobs with a side salad, vegetable, or your favorite grain. For a cookout, I would recommend potato salad, a cold pasta salad, or corn on the cobb as a side.

Ingredients
  

  • 1 lb boneless skinless chicken breast, cubed
  • Juice of 1 lemon
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. onion powder
  • 4 cloves are garlic sliced
  • ½ cup of house Italian dressing
  • 2 red bell peppers cut into cubes
  • 2 yellow bell pepper cut into cubes
  • 1 red onion cut into squares
  • 1 container of cherry tomatoes
  • Metal or wood skewers

You can really use any vegetables you want for these grilled chicken kabobs. In preparing the vegetables cut them roughly the same size. The rule of thumb is: similar sized vegetables will take a similar amount of time to cook.

For this grilled chicken kabobs recipe you could also use turkey bites, pork bites, beef bites, or seafood like shrimp or scallops. Again, keep the pieces about the same size so the kabobs cook evenly.

Not a fan of Italian dressing? You can use a different marinade of this grilled chicken kabobs recipe. I would suggest a balsamic and honey mustard marinade. Use about 1/4 cup of balsamic vinegar, 2 tablespoons of honey mustard, 1/4 cup extra virgin olive oil, 1/4 cup water, and salt and pepper to taste. Mix well and add the grilled chicken kabobs.
