This is a simple to make pasta recipe with classic Italian flavors. Tangy sundried tomatoes and artichokes with the traditional flavor of garlic and extra virgin olive oil.
Easily adaptable with different vegetables and seasoning, this gemelli pasta recipe is a favorite pasta dish of mine. Ready in about 35 minutes, I can come home from work and have this vegetarian pasta dish on the table in no time for my hungry family.

I intentionally prepared this gemelli pasta recipe without a thick or hearty sauce. I let the juice from the sun-dried tomatoes and artichokes provide the flavor. I mostly did this because my kids prefer plain pasta noodles, so I can pull the noodles out separately and the kids don’t mind!

How To Make Gemelli Pasta Recipe
Preparing the Gemelli Pasta
- Prepare the gemelli according to the instructions on the package for al dente. Before straining, reserve 2 ounces of pasta water.
Bringing Everything Together
- While the pasta is cooking, place a large skillet or pot on high heat and add the extra virgin olive oil.
- Next, add the garlic and sauté for 2 minutes, mixing occasionally. Next, add the artichokes, sundried tomatoes, salt, ground black pepper, and dried basil.
- Sauté for 5 minutes, mixing occasionally. Next, add in the pasta and pasta water. Finally, cook for 2 minutes, mixing occasionally.

Invent Your Recipe
For this gemelli pasta recipe, I am using a can of artichokes and sliced sundried tomatoes as the complementary ingredients for the pasta. Pasta is versatile, so I would recommend adding whichever vegetables you like to this dish. I would try green beans, spinach, chard, asparagus, eggplant, carrots, or Brussels sprouts.
For an even more filling dish, I would add some grilled chicken, pork, or shrimp to this dish. Grill up the meat separately and mix it into the dish when you add the pasta.
If you like your pasta with more of a sauce, add in some tomato paste, crushed tomatoes, or canned tomato sauce. Better yet, if you have leftover homemade marinara sauce you could use that instead.
