Invent Your Recipe:
I use boneless chicken breasts for this chicken with sun dried tomatoes recipe most of the time, but I have also made this dish with sliced boneless pork chops and sliced London broil. The cook times will be similar, just be careful not to overcook the pork or London broil because they will be tough.
Sun-dried tomatoes are a favorite of mine, so I use them a lot in my dishes. For this recipe I have also used a can of diced tomatoes, fresh plum tomatoes diced, red roasted peppers, and bell peppers. You could also include olives or artichokes in the dish to increase the flavor profile. Have fun and try multiple combinations of ingredients in this chicken dish.
