Chicken Salsa with Peppers and Onions. Boneless chicken breasts cut into bite sized pieces and sautéed with peppers, onions, and salsa and served over a bed of brown rice.

Who doesn’t love a quick and easy weeknight meal. After a hard day of work I know I do not want to come home and spend hours preparing a home cooked meal. That is what makes this recipe so fantastic. It has the comfort and taste of a home cook meal, and it is prepared in about 30 minutes.

This is the fourth version or our chicken salsa series of recipes. In this version the main difference is the addition of the peppers and onions. If you like this dish, give our other three chicken salsa recipes a try.

How to Make Chicken Salsa with Peppers and Onions

Preparing the Vegetables:

  • In a large skillet add in the extra virgin olive oil and bring to a high heat. Next, add in the peppers and onions and sauté for 5 minutes, mixing occasionally.

Putting it all Together:

  • Continuing on high heat, add in the chicken pieces, salt, and black pepper and sauté for 5 minutes, mixing occasionally.

  • Finally, add in the salsa, bring to a simmer, and cook for 10 minutes, mixing occasionally.
  • If you would like the peppers to be more tender, add additional cook time before serving.

How to Serve Chicken Salsa with Peppers and Onions
