Chicken Salsa with Peppers and Onions. Boneless chicken breasts cut into bite sized pieces and sautéed with peppers, onions, and salsa and served over a bed of brown rice.

Who doesn’t love a quick and easy weeknight meal. After a hard day of work I know I do not want to come home and spend hours preparing a home cooked meal. That is what makes this recipe so fantastic. It has the comfort and taste of a home cook meal, and it is prepared in about 30 minutes.

How to Make Chicken Salsa with Peppers and Onions

Preparing the Vegetables:

  • In a large skillet add in the extra virgin olive oil and bring to a high heat. Next, add in the peppers and onions and sauté for 5 minutes, mixing occasionally.

Putting it all Together:

  • Continuing on high heat, add in the chicken pieces, salt, and black pepper and sauté for 5 minutes, mixing occasionally.

  • Finally, add in the salsa, bring to a simmer, and cook for 10 minutes, mixing occasionally.
  • If you would like the peppers to be more tender, add additional cook time before serving.
