Welcome to the sixth recipe in our Chicken and Salsa base recipe series. In this version, Chicken Breast Black Beans Recipe, I am using black beans and zucchini to change up this dish. This recipe is a subtle change, as the first version of this recipe calls for just salsa. However, a small change like this really does make a completely different dish and eating experience.

How To Make Chicken Breast Black Beans Recipe
Preparing the Chicken:
- In a large skillet or pot, add in the olive oil and bring to a high heat. Next, add the chicken and sauté on all sides for 5 minutes, mixing occasionally.
Bringing Everything Together:
- Continuing on high heat, add the zucchini, salt, ground black pepper, and garlic powder and sauté for 5 minutes, mixing occasionally.
- Next, add the salsa and black beans and bring to a simmer. Finally, cook for 5 minutes, mixing occasionally, or until the sauce has thickened.
How to Serve Chicken Breast Black Beans Recipe:
- Place the chicken breast black beans with zucchini and salsa in a large serving dish or on top of white rice.
INVENT YOUR RECIPE
This chicken breast black beans recipe is the sixth version of the chicken salsa base recipe series. I used black beans and zucchini to create a new version of the base recipe.
This dish is relatively simple, with just a few ingredients. However, feel free to change the flavor profile and texture of this dish. Try adding in hot peppers to kick up the dish, or more vegetables to create a hearty stew.
I would recommend peas, eggplant, asparagus, broccoli, green beans, spinach, potatoes, or sweet potatoes as vegetable choices to change up this recipe.
Instead of black beans, you could use pinto, cannellini, kidney, navy, or great northern beans for this recipe. Not a fan of beans? Leave out the beans entirely.

- 1 jar salsa 8-12 ounces
- 1 can black beans 15-16 ounces with liquid
- ¼ cup olive oil
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon garlic powder
