Chicken Bites with Sweet Potatoes and Broccoli. Boneless chicken breasts cut into bite sized pieces, breaded, fried, and cooked with sweet potatoes, broccoli, and onions in sweet BBQ sauce.

I enjoyed eating this chicken bites with sweet potatoes dish very much. The flavors and textures are some of my favorites. The sweetness of the BBQ sauce and sweet potatoes works well with the flavor and blandness of the chicken and broccoli. For even more flavor I breaded and fried the chicken in oil before combining the chicken with the rest of the ingredients.

My family really enjoyed this dish as well. I will have to add this recipe to my weekday dinner staples. The 32 minute cook time lends itself well to a quick after work dinner. For an even faster meal preparation, I will for-go the step of breading and frying the chicken. Instead, I will just sauté the chicken bites in oil before adding in the remaining ingredients. That could save at least 5-10 minutes of prep time, depending how quick you are at breading chicken.

How to Make Chicken Bites with Sweet Potatoes and Broccoli

Preparing the Chicken:

  • Begin by cutting the boneless chicken breasts into bite sized pieces. Next, in a medium bowl add the bread crumbs. In another bowl add the egg and whisk.
  • For each chicken piece, coat with egg and then dredge in the bread crumbs. Repeat this process until all of the chicken is breaded.
  • Next, in a large skillet add the canola oil and bring to a high heat.
  • Add in the chicken pieces and fry on both sides until golden, about 2 minutes per side, then remove the chicken from the skillet.
  • Repeat this process until all the chicken is fried.

Preparing the Vegetables:

  • Retain the oil from the chicken and return the skillet to high heat.
  • Next, add in the garlic and onions and sauté for 2 minutes, mixing occasionally.
  • Next, add in the broccoli and sauté for 4 minutes, mixing occasionally.
  • Finally, add in the sweet potatoes, salt, black pepper, and sauté for 2 minutes, mixing occasionally.

Brining it All Together:

  • Lower the skillet to medium heat and add in the cooked chicken and BBQ sauce.

  • Cook for 5 minutes, mixing occasionally to ensure the sauce is mixed throughout and the ingredients do not stick to the skillet.

How to Serve Chicken Bites with Sweet Potatoes

  • Serve the chicken bites with sweet potatoes and broccoli as the main entrée. Make a double batch to have leftovers for lunches.

If you are not a fan of breaded chicken, would like to remove some of the calories from the dish, or would like to save some preparation time, just skip the breading process and sauté the chicken directly in the canola oil, then continue on with the recipe from there.
I used broccoli and sweet potatoes for this dish mainly because that is what I had in the house. If you are looking for vegetable alternatives, this dish would also work well with asparagus, green beans, white potatoes, peas, corn, Brussel sprouts, butternut squash, and peppers.
The use of the BBQ sauce in this recipe is optional. Depending on the BBQ sauce you choose, it can easily overpower the other flavors in the dish. If you leave out the BBQ sauce entirely, the other flavors in the dish will still be enough for some great tasting food.
