I really enjoyed how this recipe turned out. It has two of my favorite ingredients: green beans and sun dried tomatoes. This recipe was a bit of a treat because sun dried tomatoes can be a little pricey, so I do not always have them in the house.
The beans in this chicken and sun dried tomatoes recipe are from the garden. You will notice two different varieties in the picture: green and yellow. I enjoy mixing up the green beans I grow. My kids especially like the yellow, purple, and red varieties.

How to Make Chicken and Sun Dried Tomatoes
Preparing the Chicken:
- In a large pot or skillet add in the olive oil and bring to high heat. Next, add in garlic and sauté for 1 minute, mixing occasionally.
- Next, add the chicken and sauté for 2 minutes, mixing occasionally.
Bringing Everything Together:
- Continuing on high heat, add in the green beans, sun dried tomatoes, salt, and ground black pepper, and sauté for 5 minutes, mixing occasionally.
- Next, add the chicken broth and bring to a simmer. Cook for 5 minutes, mixing occasionally, or until the green beans are tender.

Invent Your Recipe
For this Chicken and Sun Dried Tomatoes recipe I am using boneless chicken breasts. You could also use boneless pork loin, boneless turkey breasts, sirloin steak, or sausage. The recipe would work great with any of these options.
If you do not like green beans, this recipe translates well with spinach, chard, kale, asparagus, broccoli, or zucchini. Cooking time will vary depending on the vegetables you choose. Experiment with ingredients and find the best vegetables.
Sun dried tomatoes can be expensive, and they are not for everyone. Feel free to use diced tomatoes, fresh sliced tomatoes, or even roasted red peppers if that is the case. Or leave out the tomatoes entirely and add another ingredient such as artichokes, olives, or mushrooms. Invent the dish that works best for you.
