Chef’s Pro Tips for Perfect Shrimp Scampi

Don’t Overcook the Shrimp: Shrimp cook incredibly fast (usually 2 minutes per side). As soon as they turn pink and form a “C” shape, they are done. If they curl into an “O,” they are overcooked!

Garlic Management: Garlic can burn easily in a hot pan, becoming bitter. I like to add my garlic to the butter just as it finishes melting, then add the shrimp immediately to keep the garlic from over-browning.

The Cold Butter Finish: For a restaurant-quality glossy sauce, whisk in one extra tablespoon of cold butter right at the end after you’ve turned off the heat. This “emulsifies” the sauce so it stays creamy and clings to your ingredients.

How to Pivot Your Base: Invent Your Next Scampi Variation

The Spicy Pivot: Add a half-teaspoon of crushed red pepper flakes to the butter for a “Shrimp Fra Diavolo” style kick.

    I’m kicking off this series with my absolute favorite version: Quick and Easy Shrimp Scampi with White Wine.

    In this first recipe, I am pan-searing the shrimp directly in a shimmering garlic butter sauce and deglazing the pan with a splash of dry white wine to create a sophisticated, restaurant-quality finish.

    Throughout this series, I’ll show you how to prepare shrimp several different ways—for instance, in my second version, I prepare the sauce separately and bake the shrimp in the oven.

    But for this stovetop version, the magic happens in one pan, creating a wonderful and tasty shrimp scampi dish that pairs perfectly with your favorite pasta for a high-end eating experience in just 15 minutes.

    Ingredients

    Preparing the Shrimp

    • In a large skillet add ¼ cup extra virgin olive oil and bring to medium heat.
      ¼ cup Extra Virgin Olive Oil
    • Add the minced garlic and sauté until golden, about 1-2 minutes.
      4 gloves of garlic
    • Next, add the shrimp and sauté for 2-3 minutes until the shrimp begins to turn pink.
      2 lbs. extra-large shrimp
    • Next, add the butter, white wine, lemon juice, salt, pepper, and fresh parsley. Bring to a simmer and cook for 5 minutes.
      1 cups white wine, 1 stick of butter, ½ tsp. salt, ½ tsp. black pepper, ¼ cup fresh parsley, Juice of 1 lemon

    To Serve

    • Place shrimp on a bed of your favorite cooked pasta (recommend spaghetti or linguini). Pour of spoon the desired amount of sauce over the chicken. Garnish with fresh parsley.

    Invent Your Recipe:
    Don’t like shrimp? You can use the lemon, butter, garlic, and white wine sauce for other dishes. Try using the sauce on salmon and bake in the oven. Leave out the shrimp and use the sauce with pasta. If you like the sauce, try it with anything!
    There are several ways to make shrimp scampi; baked, pan seared, fried, with breading, and without breading, to name a few. This is the first iteration of the shrimp scampi recipe. Stay tuned for more and check back in for the other versions of this recipe.

    Easy Baked Shrimp Scampi with Breadcrumbs (35-Minute Recipe)

    For the second recipe in my series, I’m showing you how to make a delicious Baked Shrimp Scampi that features a satisfying, crispy crunch.

    In this version, I’ve decided to Pivot the Base by lightly breading the shrimp and preparing my signature garlic butter sauce separately before pouring it over the top and baking everything to perfection.

    This is a subtle change from my first version, which features shrimp pan-seared directly in the sauce, but cooking them in the oven creates a completely different dish and eating experience.

    I love this method because the breadcrumbs soak up all that garlicky, buttery goodness, making every bite incredibly flavorful and perfectly tender.

    Ingredients

    • 12 oz. large shrimp
    • 1 stick of butter
    • 1 cup white wine optional
    • 4 gloves of garlic minced
    • 1 egg
    • ½ cup bread crumbs
    • 2 tbsp. fresh parsley or ½ tsp. dried parsley
    • ½ tsp. salt
    • ½ tsp. black pepper

    Instructions

    • Pre-heat the oven to 375 degrees

    Preparing the Sauce:

    • In a small-medium sauce pan melt the butter on medium heat. Next, add the garlic, salt, pepper, and parsley and bring to a simmer.
      1 stick of butter, 4 gloves of garlic, 2 tbsp. fresh parsley, ½ tsp. salt, ½ tsp. black pepper, 1 cup white wine
    • Reduce the heat to low and simmer for 5 minutes, mixing occasionally. When the sauce is finished remove from the heat.

    Preparing the Shrimp:

    • While the sauce is cooking preheat the oven to 375 degrees. In a mixing bowl, add the egg and whisk to make an egg wash.

    • Next, peel, clean the shrimp, and place into the egg. In a second mixing bowl add the bread crumbs.
      ½ cup bread crumbs
    • Next, bread the shrimp by covering the shrimp in egg and then bread crumbs. Place the shrimp in a single layer on a baking sheet.

    Bringing it Together:

    • Pour the warm sauce over the shrimp on the baking sheet, ensuring the sauce covers all of the shrimp.

    • Next, place the shrimp into the oven and bake for 15 minutes.

    To Serve:

    • Place this baked shrimp scampi over angel hair pasta or serve with a side of roasted potatoes.

    Invent Your Recipe:
    Shrimp scampi is so simple and a great tasting dish. This garlic butter sauce will pair well will just about anything. Try it with chicken, pork, steak, or salmon.
    If you decide to make this scampi with pasta, I would double the sauce recipe and use the garlic butter sauce on the pasta as well.
    The first version of this recipe uses white wine as a main ingredient. In this version of the dish I left the white wine out. You can notice the difference without the wine, the taste is still wonderful, just less amazing. If you do decide to add in the white wine it will be 1 cup. Add the wine to the sauce after the butter has melted and then bring to a simmer. Continue on with the recipe from there.

    For my third variation, I’m sharing a Refreshing Shrimp Zucchini Scampi that is a true traditional favorite with a healthy twist.

    I decided to Pivot the Base by introducing shredded zucchini and carrots into my signature lemon butter and white wine sauce.

    I love how the thinly shredded vegetables mimic the texture of pasta while soaking up all that garlicky goodness, making the dish feel light yet incredibly satisfying.

    Ingredients

    • 4 tablespoons butter
    • 4 cloves garlic sliced
    • 2 medium zucchinis shredded
    • 2 medium carrots shredded
    • 1 teaspoon salt
    • ½ teaspoon ground black pepper
    • 12 ounces large shrimp cleaned

    • In a large skillet or pot add in the butter and melt on high heat. Next, add in the garlic and sauté for 2 minutes, mixing occasionally.
    • Next, add in the zucchini, carrots, salt, and ground black pepper and sauté for 2 minutes, mixing occasionally.

    Bringing the Shrimp Zucchini Scampi Together:

    • Continuing on high heat, add in the shrimp, white wine, and lemon juice and sauté for 2-3 minutes, mixing occasionally, or until the sauce reduces by half.

    How To Serve Shrimp Zucchini Scampi:

    • Serve this shrimp zucchini scampi over a bed of your favorite grain or pasta as a main entree.

    Notes

    Invent Your Recipe:
    For this shrimp zucchini scampi dish, I am using zucchini and carrots as my vegetable of choice. However, you can really use any vegetable you like. I recommend eggplant, yellow squash, green beans, asparagus, spinach, broccoli, cauliflower or Brussel Sprouts. If you can shred or chop the vegetable into small pieces, it can be used in this recipe as written.
    Instead of shrimp, you could also use scallops, boneless chicken pieces, boneless pork pieces, or sliced skirt steak. If switching out to poultry, pork, or beef I would add a few minutes on to the cooking time to ensure the meat is cooked through.
    If you do not want to use white wine in this dish you can use seafood broth, chicken broth, vegetable broth, or water instead. In lieu of broth, you could also add in more butter or add olive oil. But this would also increase the fat and calorie content of the dish. I would recommend a broth as an alternative.

    Invent Your Recipe:
    I’m serving this asparagus and shrimp recipe scampi-style, with a simple sauce of garlic and butter. I left out the white wine this time because I didn’t have any in the house—but if you do, go ahead and splash some in. It adds a nice depth of flavor.
    Shrimp and asparagus make a great pair. They’re both light and quick-cooking, and the crunch of the asparagus is a perfect contrast to the tender shrimp. You can swap in any vegetables you have on hand—zucchini, eggplant, green beans, tomatoes, sun-dried tomatoes, peppers, or broccoli would all work beautifully here.
    As for the flavor profile, I kept it classic with just salt, pepper, garlic, butter, and lemon juice. It’s a solid base you can build on. Want to switch it up? Toss in some chopped basil, oregano, thyme, or parsley. If you like a little heat, add crushed red pepper flakes or even a few slices of jalapeño.
