Easy Baked Chicken and Quinoa served with a side of green beans. A protein packed healthy meal.

Quinoa is one of my favorite grains to cook and eat. It is so filling and fun to jazz up with flavor. I tend to make quinoa in large batches and make portions to use throughout the week. For this recipe, having the quinoa already prepared from a previous meal will save a lot of time.

I cook a lot of chicken, multiple times a week, so I am always looking for something simple, quick, and tasty. I think this recipe hits all three.

Baked Chicken and Quinoa Recipe

How to Make Easy Baked Chicken and Quinoa

  • Pre heat the oven to 400 degrees

Preparing chicken:

  • Season chicken breasts with salt, pepper, garlic powder, and onion powder. Place on a baking sheet and bake at 400 degrees for 30 minutes.

Preparing the Quinoa:

  • While the chicken is baking, in a medium sauce pan add the quinoa, salt, pepper, garlic powder, and 4 cups of chicken stock.
  • Bring to a boil and simmer until all the water is gone and the quinoa is tender (about 15-20 minutes).
  • Next, add the butter and pinto beans and cook on medium heat until the butter melts and the beans are hot (about 3-5 minutes).

How to Serve Easy Baked Chicken and Quinoa

  • On a plate place a chicken breast on one half and the quinoa and beans on the other half.

Quinoa is fantastic! Filling, healthy, and a great alternative to rice. In this recipe I added pinto beans for more protein and flavor.

Quinoa is very bland by itself so I recommend cooking it with chicken or vegetable stock instead of water. If you do prefer to use water, make sure to season it with some of your favorite spices or else you run the risk of the quinoa being earthy and bland.

Ingredients
  

  • 4 chicken breasts
  • 2 cups dried quinoa
  • 1/2 tsp. salt for chicken

  • 15 oz. can pinto beans
