Preparing Chicken:
In a large skillet add in the oil and bring to a high heat. Next, add in the chicken pieces and sauté for 4 minutes, flipping the chicken over after 2 minutes.
Remove the chicken from the skillet.
Bringing It All Together:
Continuing on high heat, add in the garlic and sauté until golden, about 1-2 minutes.
Next, add in the zucchini and sauté for 2 minutes, mixing occasionally.
Next, add in the beans, tomatoes, salt, and black pepper. Bring to a simmer and cook for 2 minutes, mixing occasionally.
Finally, add the chicken back into the skillet, bring to a simmer, and cook for 5 minutes, mixing occasionally.
To Serve:
Place the chicken with zucchini and beans into a large serving dish or on top of brown rice.

Invent Your Recipe:This dish has a wonderful combination of colors, flavors, and textures. It really is a fantastic eating experience.I picked cannellini beans for this dish, however, you can pick your favorite beans instead. Red kidney, Navy, Garbanzo, Black, and Pinto beans will all work well. I used diced tomatoes because I had a can in the pantry. You could also use fresh tomatoes or sun dried tomatoes as well.For the main protein aspect of this dish, boneless pork loin cut into pieces, shrimp, or scallops would work well.
