In a large pot add in the extra virgin olive oil and bring to a high heat. Next, add in the garlic and sauté until golden, 1-2 minutes.
Next, add in the onions, bell peppers, carrots, salt, and black pepper, and sauté for 5 minutes, mixing occasionally.
Next, add in the beans, diced tomatoes, and chili powder and bring to a simmer.
Finally, cook for 20 minutes mixing occasionally.
