Roast the tomatoes at 425 degrees for 10 minutes and prepare the pasta according to the package instructions.
In a large pot or skillet add ½ cup of extra virgin olive oil and sauté the garlic and onions.
Continuing on medium heat, add in the cooked tomatoes, salt, and ground black pepper and sauté for 2 minutes, mixing occasionally
Next, add in the spinach and cook for 2 minutes, mixing occasionally, or until the spinach is cooked to your liking.
Finally, add in the cooked pasta and 1 cup of starchy water. Cook for 5 minutes, mixing occasionally, or until the desired temperature.
Serve the spaghetti with spinach and tomatoes with toasted Italian bread. This dish is a perfect vegetarian meal option.
