Slice the potatoes and onion into thin pieces. In a medium skillet add the oil and bring to a high heat.
Add a layer or potatoes to the skillet then add a layer of onions on top of the potatoes and season with salt and pepper.
Repeat this process with a second layer of potatoes, onions, salt, and pepper. If potatoes or onions remain add a third layer.
Cover the potatoes and sauté for 10 minutes on medium heat. Next, turn over the potatoes and cook for 5 more minutes on medium heat. Finally, turn over the potatoes one more time and cook for 5 minutes.
