In a large skillet add the extra virgin olive oil and bring to a high heat. Next, add the garlic and sauté until golden, about 1-2 minutes.
Next, add in the chicken, salt, and black pepper and sauté for 5 minutes, mixing occasionally, ensuring all side of the chicken are cooked and not pink.
Lower to a medium heat and add in the sun-dried tomatoes.
Sauté for 5 minutes, mixing occasionally.
Place the chicken with sun dried tomatoes in a large serving dish or serve with a vegetable.
