In a large skillet add the canola oil and bring to a high heat.
Next, add in the chicken, salt, and black pepper and sauté for 5 minutes, flipping the chicken after 2 minutes.
Next, add in the onion and sauté for 2 minutes, mixing occasionally.
Finally, add in the barbeque sauce and sauté for 5 minutes, mixing occasionally, until the chicken starts to get a crust.
Place the chicken with sun dried tomatoes in a large serving dish or serve with a vegetable.
