Easy Tomato Soup Recipe. Crushed tomatoes, vegetable broth, navy beans, and seasonings simmered and blended for a creamy and delicious tomato soup. A healthy, filling, and delicious vegetarian dish.
This recipe was the direct result of my wife having a craving and us being out of store bought tomato soup. I am not a big soup person. Don’t get me wrong, with the right conditions; cold winter night, just shoveled some snow, need to warm up, soup can be amazing. However, for me personally, I think of soup more as a warmup to the main part of the meal, not the meal itself.
I understand that soup is tasty, filling, healthy, and comforting, but I have a list of many other foods I would prefer to eat other than soup. I am probably in the minority in my unfavorable opinion on soup, so I will own that.
But for my wife, when she wants soup. I make soup!

The comforts of and easy tomato soup recipe are wonderful. Paired with a grilled cheese sandwich and you have an all American hot meal. This tomato soup recipe I use navy beans instead of cream to provide the creaminess for the soup. The blended beans are a great source of protein, however, if you prefer use cream instead of the beans.
I choose crushed tomatoes for this recipe because I like the texture, however, tomato sauce, tomato puree, or whole tomatoes would all work well. For a roasted tomato soup recipe add the tomatoes to a baking pan and roasted them in the oven for about 30 minutes before starting the recipe.
I kept the seasoning pretty simple for this dish, but feel free to add additional herbs and or spices. Maybe try some spice with crushed red pepper flakes, or add some jalapenos to the blender. Have fun adding the ingredients that you like.
