I dove into the multiple bags of spinach I harvested from the garden and got cooking. I grabbed some chicken, carrots, onions, a few herbs, and some chicken broth.
I combined everything into a large pot and simmered away. This spinach soup with chicken is simple to make and healthy. When I have an abundance of spinach I like to make large batches of soup to have for a few meals.
During the cold early Spring evenings a nice hot bowl of soup with some homemade einkorn bread really hits the spot.
This dish is a great base recipe that allows you to add or remove ingredients to fit your tastes. Add more vegetables, take out some herbs, add in some pasta, or use a different broth.

Preparing the Spinach Soup:
- In a large pot add in the olive oil and bring to high heat. Next, add in the chicken and sauté for 4 minutes, mixing occasionally.
- Next, add the garlic, onions, carrots, thyme, salt, and ground black pepper and sauté for 4 minutes, mixing occasionally.
- Next, add the spinach and sauté for 2 minutes, mixing occasionally, or until the spinach reduces by half.
- Finally, add the chicken broth and grated cheese, bring to a simmer, and cook for 30 minutes, stirring occasionally.
How to Serve Spinach Soup with Chicken
- Serve the spinach soup with chicken with a side salad and crunchy bread. Add more salt, ground black pepper, and grated cheese to taste.
INVENT YOUR RECIPE
For this spinach soup with chicken recipe, I am using boneless chicken breasts. You could also use boneless turkey breasts, boneless pork loin, skirt steak, or flank steak. The recipe would work great with any of these options. If using pork or beef I suggest cutting the pieces to ¼-inch cubes.
If you are not a fan of spinach you can leave it out. You could then add in other vegetables like peppers, eggplant, zucchini, asparagus, or tomatoes and make a filling chicken and vegetable soup.
For some additional texture, you could add is some beans. Try cannellini, pinto, red kidney, navy, garbanzo, or great northern beans. I do not recommend black beans because I feel they change the look and taste of this soup too much. However, invent your own recipe, so if you love black beans, use them.
