Over the years I have created a list of go-to recipes that I use when I want a familiar, great-tasting, and simple meal. This list is especially useful during the week for dinners and on the weekends when the days are filled with activities. This list is mostly comprised up of dishes that are under 30 minutes to prepare, use readily available ingredients (such as diced tomatoes, canned beans, or frozen vegetables), are economical for the family, and are hits with the family.
This recipe, pork with beans and tomatoes, is on the go-to list. The reason? The recipe only takes about 25 minutes to prepare, it uses canned diced tomatoes and navy beans, is economical because I am cutting the pork chops from a boneless pork loin, and the family really enjoys this dish.

How to Make Pork with Beans and Tomatoes
Preparing the Pork:
- Cut boneless pork chops into 1 inch cubes and seasoned with salt and pepper. In a large skillet add in the canola oil and bring to a high heat.
- Next, add the garlic and sauté until golden, about 1-2 minutes. Next, add the pork and sauté on all sides until golden brown (about 5-7 minutes total).
Bringing it all Together:
- Continuing on high heat, add in the tomatoes and beans and bring to a simmer.
- Cook for 10 minutes, mixing occasionally.
How to Serve Pork with Beans and Tomatoes
- Serve the pork with beans and tomatoes on a bed of rice or pasta.
- For a gluten free option serve without rice or pasta. You can replace with quinoa instead, or serve the pork with beans and tomatoes without any wheat or grain products.

- 4 boneless pork chops cut 1” cubes
- 1 15oz can of diced tomatoes or 2 plum tomatoes diced
- 1 15oz can of navy beans or equivalent
- 4 cloves of garlic sliced
- ¼ cup canola oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper

Invent Your Recipe:
Fresh tomatoes are not always the best tasting when I buy them from the store, especially when it is not tomato season. For this reason, I always keep a few varieties of canned tomatoes in the house. Usually, crushed, pureed, and diced.
In this recipe, pork with beans and tomatoes, I am using a can of diced tomatoes, but if you have fresh tomatoes, I would recommend using them. I also keep a few varieties of canned and dried beans in the house. I am using a can of navy beans in this version of the recipe, however, I have made this recipe with red kidney beans, pinto beans, and cannellini beans.
You might have noticed I am not draining the excess oil from the pan before adding in the tomatoes and beans. I did this for some extra flavor, however, feel free to drain the oil to reduce some of the calories and make this dish a little healthier. If you do drain the oil, I would suggest maybe adding in some chicken or vegetable broth for some flavor and to help the tomatoes and beans simmer.
