Welcome to the fourth recipe in our Lemon Herb Pork series of recipes. In this version, Lemon Herb Pork with Zucchini, we are using zucchini, sweet potatoes, thyme, and balsamic vinegar to change up this dish. This recipe has some differences, as the first version of this recipe calls for broccoli and spaghetti. However, a change like this really does make a completely different dish and eating experience.

How to Make Lemon Herb Pork with Zucchini:
- Preheat the oven to 375 degrees
Preparing the Pork:
- Line a large baking tray with parchment paper. Next, place the pork, zucchini, and sweet potatoes on the baking sheet and mix well.
Preparing the Lemon Herb Marinade:
- In a small mixing bowl add the extra virgin olive oil, balsamic vinegar, salt, thyme, basil, garlic powder, ground black pepper, and lemon juice. Mix well to combine all the ingredients.
Cooking the Lemon Herb Pork:
- Drizzle the lemon herb marinade over the pork and vegetables. Mix well to ensure everything is coated with the marinade.
- Place in the oven and bake at 375 degrees for 50 minutes, or until the vegetables are fork-tender.

- Serve the lemon herb pork with zucchini as the main entrée and pair it with your favorite grain.
Invent Your Recipe
For this recipe, lemon herb pork with zucchini, I am using sweet potatoes as another vegetable to add texture and flavor to the dish. You could also use red bliss potatoes, yellow potatoes, or baking potatoes. Also, you could add other vegetables as well, including asparagus, green beans, eggplant, carrots, tomatoes, pepper, or onions. If you have room on the baking sheet add whichever vegetables you like.
I have also made this recipe with boneless chicken breasts, sirloin steak, and boneless turkey breasts. The cooking time will vary depending on the meat you use, but the above protein will work nicely in this dish.
If you are looking for some more flavor or spice, feel free to add in what you like. Try some red pepper flakes or chili powder. How about some cumin, turmeric, ginger, or all spice?

- 4 boneless pork chops cut into 1-inch cubes
- 2 medium zucchini cut into 1-inch cubes
- 3 medium sweet potatoes skins removed and cut into 1-inch cubes
