Chicken with Zucchini and Beans. Boneless chicken pieces sautéed with garlic, zucchini, diced tomatoes, and cannellini beans.
Welcome to the second recipe in our Chicken with Cannellini Beans series of recipes. In this version, Chicken with Zucchini and Beans, we are using zucchini to change up this dish. This recipe is a very subtle change, as the first version of this recipe calls for tomatoes and broccoli. However, a small change like this really does make a completely different dish and eating experience.

Fresh vegetables are such a delight. Where I live, I can not always get the fresh vegetables that I want all year round. Our winters are cold and certain vegetables are not available until the spring or summer. Zucchini is available all year round in the grocery store so I decided to make this dish. There is nothing like a home grown vegetable, so I can not wait until the summer when my zucchinis are ready.

How to Serve Chicken with Zucchini and Beans
- Place the chicken with zucchini and beans into a large serving dish or on top of pasta.
My favorite way to eat this dish is with the chicken with zucchini and beans mixed in with pasta. I usually serve the chicken and pasta separately and then mix them on my plate. However, I have also added cooked pasta into the skillet at the end of the recipe and mix before serving.

This dish has a wonderful combination of colors, flavors, and textures. It really is a fantastic eating experience.
I picked cannellini beans for this dish, however, you can pick your favorite beans instead. Red kidney, Navy, Garbanzo, Black, and Pinto beans will all work well. I used diced tomatoes because I had a can in the pantry. You could also use fresh tomatoes or sun dried tomatoes as well.
For the main protein aspect of this dish, boneless pork loin cut into pieces, shrimp, or scallops would work well.
