Chicken Scampi with Eggplant. Boneless chicken breasts cuts into bite sized pieces and sautéed in a scampi style sauce with eggplant.

This was a fun recipe to make. Of course it is not a traditional scampi recipe, but it is delicious none-the-less. I decided to use the same ingredients of a shrimp scampi and substitute boneless chicken breasts instead.

How to Make Chicken Scampi with Eggplant

Preparing the Chicken

  • In a large skillet add the butter and melt on medium heat. Next, add the garlic and sauté until golden, about 1-2 minutes.
  • Next, add the chicken and sauté for 4 minutes, mixing occasionally.

Bringing Everything Together

  • Continuing on high heat, add the eggplant, salt, and pepper and sauté for 5 minutes, mixing occasionally.
  • Finally, add the lemon juice and sauté for 2-4 minutes, until the eggplant is tender, ensuring to mix occasionally.

How to Serve Chicken Scampi with Eggplant

  • Serve the chicken scampi with eggplant with a side of roasted potatoes, brown rice, or with your favorite pasta.

  • 1 medium eggplant cut into thick strips
  • 1 stick of butter
  • 4 gloves of garlic diced
  • 1 tsp. salt
  • ¼ tsp. black pepper
  • Juice of 1 lemon

Of course, this recipe was inspired by a more traditional shrimp scampi sauce. With that said, this sauce will work well with shrimp, scallops, and calamari. I have also used this sauce on boneless pork bites, so I can definitely recommend giving that a try.
