Bell peppers and onions are one of my favorite combinations of vegetables. The flavor is outstanding and the vegetable combination pairs well with alot of dishes. In my opinion, most favorably with sausage and chicken.
In this recipe, chicken and bell peppers, I am making a healthy, quick, and simple chicken dish that works well as a weekday dinner. The chicken breasts are cut into thinner cutlets and pan-seared for amazing flavor.
The peppers and onions are pan-fried with garlic and oil, realeasing an amazing aroma. Well to me at least. My wife does not care for the smell of peppers and onions!
Once the peppers and onions are tender, the chicken is added back in to finish cooking with the vegetables. A simple recipe that is healthy and full of flavor.
You can easily prepare this chicken and bell peppers recipe for two people. Simply halve the recipe and enjoy.

How to Make Chicken and Bell Peppers with Onions
Preparing chicken:
- Season chicken cutlets with salt, pepper, garlic powder, and onion powder. In a large skillet on high heat pan sear chicken cutlets in ¼ cup of canola oil until golden brown on all sides (about 6 minutes). Remove chicken from skillet and drain the oil.
Brining the Chicken and Bell Peppers Recipe Together:
- Return the skillet to high heat, add in the extra virgin olive oil and garlic and sauté until golden brown. Once the garlic begins to turn golden brown, reduce to medium heat and add sliced peppers and onions and sauté for 10 minutes, mixing occasionally. Next, return the chicken to the skillet. Cook for 5 minutes, flipping the chicken half way through.
How to Serve Chicken and Bell Peppers with Onions
- Serve this chicken and bell peppers recipe with a side of roasted potatoes or your favorite whole grains, such as brown rice, quinoa, or bulgur wheat.

Ingredients
- 4 chicken breasts cut into 8 cutlets
- 2 cloves of garlic sliced
- 4 bell peppers sliced
- 2 sweet onions sliced
- ¼ cup Canola oil for chicken
- 2 tbsp. extra virgin olive oil or canola oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
Instructions

I make chicken a few days a week so this chicken and bell peppers recipe is great for a quick meal after work. The seasoning is simple and the cooking method uses just one skillet. This recipe would also work well with boneless pork chops, turkey breasts, or sirloin steak.
In this chicken and bell peppers recipe I am only using peppers and onions to pair with the chicken. Feel free to add more vegetables, such as, broccoli, zucchini, green beans, spinach, eggplant, or asparagus.
Additionally, you could add roasted potatoes, roasted sweet potatoes, or your favorite whole grain as a side for the chicken and bell peppers.
